After the requisite Easter feasting - we were in Italy where they excel at this - I’m re-focussed on the colour intake for all involved.

These are things I’m glad I took on holiday and what I am making now to fuel the brains at work.
THE MOST LOVED EASTER GIFT - to combat the chocolate load!
My husband is impossible to buy presents for - not a niche problem I appreciate, but also why I thought this was deserving of a mention. As a creative with a science degree, he is razor sharp about what he likes as well as what it looks like, and particularly not open to discussion about anything related to his ablution process in the mornings. So I was thrilled with how my accidental gift went down at Easter.
A year ago I worked with a new-ish toothbrush brand* making waves in a place that had been stagnant for a long time.
We had been through them all - the horse hairy bamboo ones in search of eco alternatives to disposable plastic brushes, tried the electric ones to keep the dentist happy and resigned myself to the reality of slime-trail sinks and grey skanky machines that needed charging every minute.
I got wildly excited about the SURI brush back then, and bought one for my teenage son too. The mirror magnet mount was my favourite thing, but the lack of mess and then the marble-shine teeth feeling were the things that made me tell everyone.

After years searching for non-nano, mineral suncream that wasn’t chalky and didn’t stick, I discovered this last year and is the very finest for your face.

Miso Salmon, with Ginger Carrot Noodles and Pak Choi
Feeding the masses at half term can get taxing, especially when you’re after adding some colour and protein.
The vegetables combined with the noodles and the umami kick of the miso marinated salmon, caramelised in the pan are a quick way to maximise flavours and provide some crucial Omega 3s which are what I’m trying to hit with the exam season.
Ginger and garlic sautéed pak choi and carrot ribbons. All tossed through soft egg noodles and served with optional chillies and coriander.
Serves 4
4 Salmon Fillets, skinned and sliced into bite size pieces
100 ml Tamari Sauce
2 tbsp olive oil
X2 250g Egg Noodles
2 Carrots, peeled into ribbons (or use a spiralizer)
1 courgette, peeled into ribbons as above
1/2 Pak choi sliced
1 inch fresh ginger, minced
2 cloves garlic, crushed
Handful fresh coriander
Mix the soy sauce with the ginger and garlic and 1 tbsp of the olive oil, pour over the salmon pieces, stir and leave to marinade for 30 minutes or overnight.
Cook the noodles as packet instructions - I use rice noodles for gf alternative or just omit and add extra carrots - adding the carrot and courgette ribbons to the water in the last minute of cooking, and then drain and add everything to a serving bowl.
Warm the remaining olive oil in a large pan over medium heat, tip the salmon with the sauce into the pan, and stir-fry until browned and caramelised on each side. Adding the pak choi for the final minutes just to wilt.
Pour the salmon over the noodles, folding gently and serve with fresh coriander and sliced chilli.
